Pongal recipes

VEN PONGAL

Ingredients

Rice –  1 Cup
Moong Dal – 1/4 Cup
Black Pepper – ½ tsp
Jeera – 1 tbsp
Ginger – 1 tsp
Hing  – 1 tsp
Cashew for garnishing
Ghee – 2 Tbsp
Water – 3 Cups
Salt to taste
Curry leaves – 1-2 strand

Method

  • Wash rice and dal together, cook the rice dal mixture in cooker with salt.
  • Once you get 3-4 whistles switch off the stove, wait till the steam releases.
  • Open the lid; add ghee mix thoroughly to mash the rice dal mixture.
  • In a Kadai temper the balance ghee, add chopped ginger, black pepper corns, jeera, and cashew nuts.
  • Fry till golden brown, finally add curry leaves and hing. Switch off the stove.

Serve hot and tastes best with sambar, coconut chutney and crispy vadas.

Rava pongal

Ingredients

Rava   –  1 Cup
Moong Dal – 1/4 Cup
Black Pepper – ½ tsp
Jeera – 1 tbsp
Ginger – 1 tsp
Hing  – 1 tsp
Cashew for garnishing
Ghee – 2 Tbsp
Water – 3 Cups
Salt to taste
Curry leaves – 1-2 strand

Method

  • Fry the rava without oil till you start getting a nice aroma.
  • Pressure Cook the moong dal with 1 ½ cup of water.
  • After the pressure subsides transfer the cooked dal to a heavy bottomed pan and add a cup of water and salt. Allow it to boil well.
  • Add fried rava to the above boiling moong dhal mixture in small quantities and stir continuously till the rava is cooked completely.
  • While rava is cooked add the ghee little by little on the sides.
  • Garnish with ginger, black pepper, cashews and cumin seeds in a teaspoon of ghee.
  • Finally add curry leaves and hing to the pongal and serve hot.

Rava pongal tastes best with coconut chutney.
