Honey – 2 tbsp
Virgin Olive oil – 2 tbsp
Chicken breasts – 2 (skinless and flattened out)
Vinegar – 1 tbsp
Watercress or arugula – 100g
Red onion – ½ (finely sliced)
Cucumber – ½ (sliced and seeds removed)
- Mix mustard, honey and olive oil and season. Spread all over the chicken.
- Heat the griddle to hot and griddle the chicken on both sides until cooked.
- Then slice the chicken. Mix the vinegar with the olive oil, then the mustard and honey and season.
- Toss the chicken with the watercress or arugula, red onion, cucumber and serve.
