Mustard and honey glazed chicken and watercress salad


Mustard     – 2 tbsp

Honey     – 2 tbsp

Virgin Olive oil         – 2 tbsp

Chicken breasts   – 2 (skinless and flattened out)

Vinegar      – 1 tbsp

Watercress or arugula   – 100g

Red onion – ½ (finely sliced)

Cucumber – ½ (sliced and seeds removed)


  • Mix mustard, honey and olive oil and season. Spread all over the chicken.
  • Heat the griddle to hot and griddle the chicken on both sides until cooked.
  • Then slice the chicken. Mix the vinegar with the olive oil, then the mustard and honey and season.
  • Toss the chicken with the watercress or arugula, red onion, cucumber and serve.
