Broccoli and Peas soup is a very healthy soup. Both broccoli and peas are rich fibrous vegetable and hence they considered as low calorie vegetables and a good source of Phyto-nutrients that protects from prostate cancer and stroke risks. Both Broccoli and peas has good amount of bvitamins that prevents diseas and promotes health.
- Broccoli florets – 1 (chopped)
- Peas – 1/2 cup
- Onion – 1 cup(chopped)
- Potato – 1 ½
- Vegetable broth – 3 cups
- Olive oil – 1 tbsp
- Garlic cloves – 2
- In a Pan, add oil, onion and garlic; cook for 5 minutes or until tender, stirring frequently.
- Add vegetable broth, potato, and peas. Bring to a boil; simmer for 10 minutes (just until potatoes and peas are tender) stirring occasionally.
- Add broccoli cook until it is tender.
- In a blender, add the mixture and blend it until smooth.
- Pour the filtered content into a greased pan. Cook over medium-low heat for 5 minutes or until cooked, stir occasionally
- Sprinkle the cheese evenly and serve hot.
