Bean, baby corn and mushroom salad

Ingredientssalad 1

1/2 cup Fresh mushrooms, sliced
1/2 cup Baby corn boiled and cubed
3/4 cup Bean sprouts
1/2 cup Spring onion cubes
1/2 cup Capsicum cubes
1/2 cup Cucumber cubes

For the dressing
1 tbsp olive oil
3 cloves finely chopped garlic
1 tbsp fresh basil leaves, finely chopped
2 tsp Lemon juice
Salt and chat masala to taste


For the dressing

  • Heat the oil in a non-stick pan, add the garlic and sauté till it browns lightly.
  • Add the basil leaves and mix well. Cool completely.
  • Add the lemon juice, salt and chat masala and mix well.
  1. Combine all the ingredients in a bowl and toss. Refrigerate.
  2. Just before serving, add the dressing to the salad and toss well.
  3. Serve immediately.
