Avial

Ingredients

Drum stick – cut into 1” pieces

Carrots -3 – cut into thin fingers

French beans 10 -12 – 1” pieces

Yam – 100 gms (cut into 1”pcs)

 Peas- 100 gms

Potato- 1 nos (cut into 1”pcs)

Sour Curd  – 1 cup

Water – 1 cup

Coconut Oil – 2 tbsp

Salt – 1 tbsp

For Grinding

Freshly grated coconut – 1 cup

Green chilli – 4 –5 (Grated)

Cumin seeds – 1tsp

Method

1. Grind the grated coconut, chillies and cumin seeds. Sprinkle water to mix now and then in the mixer till smooth.

2. In the pan, boil the entire vegetables together with 1 cup of water, cook until tender.

3. Once the vegetables are cooked, add the coconut paste, sour curd and salt. Simmer the stove.

4. Now when the mixture starts to boil. Switch off the stove

5. Add plain coconut oil and curry leaves. Serve hot.

Avial is all time favorite which goes well with Kara kolambu.  It’s an exotic dish of keralites which occupies an important place in sadya’s .Rich in taste and a balanced dish with all proteins and vitamins.
